When I was still a kid, I watched Popeye the Sailor Man on TV eat this veggie whenever he’s in trouble. I started wondering how this energy-boosting green leafy vegetable makes Popeye stronger. When I tasted spinach for the first time, the experience was not that so delightful. Josh was right, it tastes yucky….hehehe. But I tried adding it with other recipes like this omelette and it turns out to be okay. However it was not a hit with my kids, I don’t know why, maybe because of the color. Josh said it reminds him of the Incredible Hulk…hehehe. They don’t even bother to taste it.
After a week I tried making the omelette again but I lessened the spinach and it looked like this. This time the kids loved it and asked for more.
I also tried this Stuffed Chicken Breast for lunch.
8-10 chopped Kalamata Olives
2 minced cloves garlic
1/2 pack frozen spinach, thawed
2-3 tablespoons Low Fat Feta Cheese
2 tablespoons of olive oil
Salt & Pepper
2 large chicken breasts
Mix together first 4 ingredients. Slice a deep pocket into the chicken breast to fit stuffing. Fill stuffing into chicken and lightly brush chicken with olive oil and salt and pepper. Bake for about 15-20 minutes, or until done.
(This is the mixture of the first 4 ingredients)
Served with green vegetables.
For dinner you can try this mouth watering vegetable salad. I don’t have the exact measurement.

cheddar chesse (light)
zucchini
lettuce
cucumber
tomatoes
bell pepper
olives
To preserve the freshness of brocolli , just stir-fry with a small amount of oil (olive oil) .
